Depends on what kind of EDH deck you want to make. But overall, the most popular commander in my opinion is Oloro, Ageless Ascetic. It's mainly used in a deck called Oloro Lifedrain, because it not only gives you life, it allows to drain life and draw cards if you pay one mana when you gain life.
